Grapes: Primarily made from Xinomavro (90–100%), sometimes blended with a small amount of Assyrtiko (10%).
Flavor Profile: The wine features a "blanc de noir" style with a yellow-straw color and persistent fine bubbles. It offers a creamy mouthfeel, sharp acidity, and a long aftertaste.
Aromas: Characterized by a refined nose of citrus, stone fruits, and autolytic notes like toasted bread, yeast, and hazelnut.
Production: Produced using organic and biodynamic methods from vines older than 40 years. Each bottle is manually rotated during secondary fermentation and is often hand-numbered.
